Spanish Roasted Mushrooms with Smoked Paprika

These Spanish Roasted Mushrooms with Smoked Paprika have an incredible texture & flavor, they´re easy to make and done within 25 minutes. This is the kind of tapas appetizer that really takes center stage on the appetizer table. They have a beautiful apperance and with one taste, probably the best mushrooms you will ever taste.

Since the mushrooms are roasted and not fried, they have an incredibly meaty texture to them. The sweet smoked paprika takes them to the next-level and gives these mushrooms that classic Spanish flavor. For this recipe I used button mushrooms, but you can also use baby portabella mushrooms.

So what is the difference between roasting mushrooms and sauteing them? When you roast mushrooms they hold their texture better than when you sauté them. This gives the mushrooms more of a meaty texture. Listen, I´m a sucker for sauté mushrooms and absolutely love them. But when you roast mushrooms you get a different texture and flavor.

Spanish Roasted Mushrooms with Smoked Paprika

Ingredients

  • 12 button mushrooms
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sweet smoked paprika
  • 1/2 tsp garlic powder
  • pinch sea salt
  • pinch freshly cracked black pepper
  • handful fresh chives

Instructions

  1. Wash and pat dry 12 button mushrooms, making sure to remove any excess dirt, then cut off some of the stem from each mushroom, without removing the entire stem, add the mushrooms to a large bowl

  2. Drizzle in 2 tbsp of extra virgin olive oil into the mushrooms, along with 1/2 tsp of sweet smoked paprika, 1/2 tsp of garlic powder, a generous pinch of sea salt and some freshly cracked black pepper, toss it all together until well combined

  3. Add the seasoned mushrooms to a baking tray lined with foil paper, making sure all the mushrooms are bottom side up and the cap side down, add into a preheated oven, bake + broil option 250 C - 475 F

  4. After 14-15 minutes remove the mushrooms from the oven and transfer to a dish, sprinkle each mushroom with a generous portion of freshly chopped chives, enjoy!
