Spanish Pasta with Roasted Red Pepper Sauce

Everybody loves a good pasta, but this Spanish Pasta with Roasted Red Pepper Sauce is the next-level in pasta dishes. Loaded with so many different flavors, easy to make and done in 30 minutes. This is the BEST weeknight pasta ever, or serve it on the weekend next to a glass of red wine, to make it a special moment in life 🙂 .

To make the roasted red pepper sauce I used jarred roasted peppers, just to make things easier. If you prefer, you can roast your own in the oven. I also used penne pasta noodles, but again, you can use whatever type of pasta noodles you like. Just make sure to cook them al dente. Nothing worst than over-cooked pasta.

One of my favorite things about this pasta, is that it taste so different from ordinary tomato sauce pastas, yet it´s made with the simplest ingredients. The roasted red peppers add a new dimension in flavors, making this pasta one of the most memorable pastas you will ever taste.

TIPS & TRICKS to make this recipe: When using jarred roasted peppers, make sure you drain the liquid in the jar before you add the peppers into the food processor. I used canned tomato sauce, but you can replace it for 1 large ripe tomato. I can´t stress this enough, make sure you cook your pasta al dente. Read the package instructions, it´s usually between 8 to 9 minutes. Nothing worst than over-cooked pasta.

Spanish Pasta with Roasted Red Pepper Sauce

Ingredients

  • 1 12 oz jar roasted red bell peppers
  • 1/2 cup canned tomato sauce
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic minced
  • 1/2 small onion diced
  • 1 tsp sweet smoked paprika
  • 2 cups penne pasta
  • pinch sea salt
  • pinch black pepper
  • handful fresh parsley

Instructions

  1. Fill a sauce pan with 5 cups of cold water, season generously with sea salt and heat it with a high heat

  2. Meanwhile add one 12 ounce jar of roasted red bell peppers (drained) into a food processor, also add in 1/2 cup canned tomato sauce and season with sea salt & black pepper, run the food processor on a low speed for 2 minutes or until everything is well combined with no chunks

  3. Heat a fry pan with a medium heat and add in 2 tbsp of extra virgin olive oil, after 2 minutes add in the diced onions and minced garlic, mix with the olive oil, 3 minutes later add in 1 tsp of sweet smoked paprika and quickly mix all together, then pour in the roasted red pepper sauce, mix together until well combined and lower the fire to a low-medium heat to simmer

  4. At this point your water should be boiling, add in 2 cups of penne pasta and cook al dente (read the package instructions), it´s usually between 8 to 9 minutes, then drain the pasta, add it to the red pepper sauce and mix together until well combined, sprinkle the pasta with freshly chopped parsley and serve, enjoy!
