Spanish Flatbread with Caramelized Onions – Coca de Cebolla Recipe

When it comes to simple and tasty food, Spain is king. This Spanish Flatbread with Caramelized Onions is no exception. Loaded with simple yet incredible flavors, beyond easy to make and done in about 45 minutes.

In Spain most people enjoy this flatbread for breakfast or afternoon tea, but you can always serve it as a tapas appetizer. Heck, I even like to serve this flatbread next to a salad for a complete meal. For this recipe I used a premade pizza dough, just to make things easier. What really takes this flatbread to the next-level in greatness is the additon of sweet smoked Spanish paprika. This really gives the flatbread a new dimension in flavors and takes it ¨over-the-top¨. I used Kiva´s sweet smoked Spanish paprika, truly an amazing Spanish paprika. It has the perfect balance of sweetness and smokiness to give this flatbread that ¨wow¨ factor.

Spanish Flatbread with Caramelized Onions - Coca de Cebolla Recipe

Ingredients

  • 1 premade pizza dough
  • 1 tsp sweet smoked paprika
  • 2 tbsp extra virgin olive oil
  • 3 large brown onions
  • 1/2 tsp white sugar
  • 3/4 tsp sea salt
  • 1/8 tsp freshly cracked black pepper
  • 1/2 tsp dried thyme
  • 1 tsp parsley flakes
  • 2 organic eggs

Instructions

  1. Thinly slice 3 large brown onions, heat a sauce pan with a medium heat and add 2 tbsp of extra virgin olive oil, then add the slices of onion and mix with the oil, mix the onions occasionally, after 10 minutes add 1/2 tsp of white sugar and mix with the onions, this will help caramelize the onions, after cooking the onions between 15-16 minutes total, they should be perfect caramelized, remove the pan from the heat, season the onions with 1/2 tsp thyme, 1 tsp parsley flakes, a generous 1/2 tsp of sea salt and freshly cracked black pepper, mix together until well combined

  2. Crack 2 organic eggs into a large bowl, season them with sea salt and freshly cracked black pepper and beat the eggs, then add the caramelized onions and mix together until well combined

  3. Roll out one premade pizza dough, pinch the dough with a fork all over, then sprinkle a generous portion of sweet smoked Spanish paprika all over the dough, add the egg and onion mixture to the dough and evenly spread out

  4. Add the flatbread to a preheated oven, bake only option 210 C / 410 C, after 16-18 minutes remove the flatbread from the oven and transfer to a wire rack, let it rest for 10-15 minutes, then cut it into small squares and serve, enjoy!

    This looks great can you do this recipe with mushrooms. Had some sort of bread with mushroom topping that looks allot like your onion version in Spain and loved it.
