In my younger days I was never a fan of desserts (I know….hard to believe), but as I got older I started appreciating desserts and the magic they bring to the end of a meal. Now, when it comes to desserts, we have a huge plethora (yes, I just quoted The Three Amigos  ) of desserts to choose from, so where does one begin? Well for me, I´m the kind of guy that likes desserts that are not too sweet, I´m looking for a dessert that has a grand flavor and really wraps up a great meal. This Natillas Vanilla Pudding Recipe is a gold mine, it has layers of simple yet tasty flavors, it´s beyond easy to make and it has the perfect amount of sweetness to it. Now, I know you could easily go to the supermarket and buy premade pudding, but comon, you read the ingredients on them and there is about 40 ingredients, with at least 30 that you can´t pronounce! Spanish Pudding (Natillas) - Easy Vanilla Pudding Recipe

Ingredients

  • - 2 1/4 Cups Organic Milk
  • - 1/3 Cup Sugar
  • - 3 Organic eggs
  • - 1 Vanilla Bean
  • - 1 Cinnamon stick
  • - 3 Lemon Peels
  • - 1 Tsp Cinnamon Powder
  • - 4 Galletas Maria

Instructions

  1. Crack 3 organic eggs into a bowl and beat them, next add 1/3 cup sugar into a cup, then add half of that sugar into the egg mixture and mix it with the eggs until well mixed and set aside
  2. Heat a non-stick frying pan with a medium heat and add 2 1/4 cups of organic milk into the pan, add the rest of the sugar, 1 cinnamon stick, 1 vanilla bean, and 3 lemon peels, gently mix everything together, continue to mix until it starts to lightly boil, then lower the fire to a LOW heat
  3. Grab about 1/3 cup of the hot milk in the pan and start slowing pouring it into the bowl with the eggs while you continue to mix the eggs, this will bring the egg mixture into the same temperature as the milk in the pan, that way the eggs dont curdle when you add them into the hot pan
  4. Before adding the egg mixture into the pan, remove the cinnamon stick, vanilla bean and the lemon peels
  5. Start slowly pouring in the egg mixture into the pan while you continue to whisk the milk in the pan, once all the egg mixture is in the pan, continue to whisk without stopping for about 3 to 4 minutes, until you form a creamy texture, then turn off the heat and continue to whisk for another minute
  6. Transfer the creamy mixture into 3 seperate small bowls, then sprinkle some cinnamon powder on top and add one galleta Maria on top
  7. Cover each bowl with seran wrap and add to the fridge for at least 2 hours
  8. Enjoy!

    Your recipes are amazing. I attempted to make the Natillas today and the flavor was amazing. But, we are drinking them :). I cook with an electric stove and think that maybe I didn’t bring the milk mixture to a light boil fast enough. What do you think could have been the problem? Thank you for any input.

      make sure you mix the milk mixture nonstop until you reach a semi-thick creamy texture, if the milk is not thick enough the natillas will be watery, much love
