Mini Apple Pies with Spanish Marcona Almonds

Raise your hand if you love apple pie? I´m a sucker for apple pie and these Mini Apple Pies with Spanish Marcona Almonds are an absolute stunner. Loaded with flavors, beyond easy to make and done in about 30 minutes, plus they´re naturally vegan!

Listen, I´m not an expert baker, but these mini apple pies are seriously the easiest baked goods you will ever make. No special equipment is needed to make these mini apple pies, just a 6-count muffin tin and a large bowl. For this recipe I also used a store-bought premade pie dough, just to makes things a lot easier.

What really takes these little apple pies over-the-top is the Marcona almonds. These heart-like shaped almonds are native to the Mediterranean coast of Spain and have a sweet flavor and an incredible texture. I highly recommend them for these mini apple pies. If you can´t find them in your area, you can get some here from Amazon.com.

Mini Apple Pies with Spanish Marcona Almonds

Ingredients

  • 1 premade pie crust
  • 1 large granny Smith apple
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon powder
  • 2 tbsp white sugar
  • 1 tbsp all-purpose flour
  • 1/2 cup marcona almonds
  • non-stick cooking spray
  • powdered sugar

Instructions

  1. Using a food processor grind 1/2 cup of raw blanched marcona almonds until coarsley chopped (you can also add the almonds into a plastic bag and pound on them with a pestle)

  2. Remove the core from 1 large granny Smith apple, cut the apple into 1/2 inch cubes and add to a large bowl, add 1 tsp of fresh lemon juice into the cut apples, 1/2 tsp cinnamon powder, 2 tbsp white sugar, 1 tbsp all-purpose flour and the chopped almonds, mix together until well combined

  3. Grab a store bought pre-made pie crust, using a circular cutter (mine was 3 1/2 inches in diameter) cut circles out of the dough, you should end up with 6 individual circular doughs

  4. Spray a 6 count muffin tin with some non-stick spray and mold each of the circular doughs into each muffin hole, then evenly divide the apple mixture into the doughs

  5. Add into a preheated oven, bake + broil option 210 C - 410 F between 16-18 minutes, after the baking time remove from the oven and let them rest until cool enough to handle, sprinkle each mini apple pie with powdered sugar and serve at once, enjoy!

    Thanks for the idea of using marcona almonds. In this case, I followed my own apple crisp recipe and added marcona almonds too. I love marcona almonds and found the addition a total win!
    Maybe I’ll send you my recipe, its pretty easy too.
