Crispy Spanish Fried Eggs with Romesco Sauce

These Crispy Spanish Fried Eggs with Romesco Sauce are seriously one of the most insanely delicious dishes ever. We´re talking perfectly fried eggs, with a crispy egg white and a creamy egg yolk, paired up with a very simple yet extraordinary romesco sauce.


Folk´s, breakfast is never going to be the same. This dish elevates eggs to the next-level in greatness. My favorite part about this dish is how easy it is to put together. Made with simple ingredients and done in 30 minutes.


To make this recipe I used an extra virgin olive oil from 1836 a Texas Olive Oil Company. No joke guys, this is probably one of the best olive oil’s I have ever tasted. Get yourself a bottle or for someone you love, it makes for the perfect holiday gift 🙂 .


TIPS & TRICKS to make this recipe: I used a food processor to make the romesco sauce, but you can also use a blender if you prefer. The eggs I used where organic cage-free eggs, makes all the difference in the world. To make this recipe gluten free, skip on the bread and add some roasted asparagus underneath. To get that perfect crispiness on the eggs, make sure your heat is at medium-high and let the olive oil heat for at least 3 minutes before adding the eggs.

Crispy Spanish Fried Eggs with Romesco Sauce

Ingredients

FOR THE ROMESCO SAUCE

  • 5 jarred roasted red bell peppers
  • 1/4 cup canned tomato concentrate
  • 1 clove garlic
  • 8 blanched raw almonds
  • 8 blanched raw hazelnuts
  • 1/2 tsp red wine vinegar
  • 1/4 cup extra virgin olive oil
  • pinch sea salt
  • pinch black pepper

FOR THE EGGS

  • 4 eggs
  • 1/4 cup extra virgin olive oil
  • pinch sea salt
  • pinch black pepper

EXTRAS

  • 4 slices of bread
  • handful fresh parsley

Instructions

  1. To make the romesco sauce, pan roast 8 blanched almonds and 8 blanched hazelnuts under a medium heat until they´re lightly toasted (4 to 5 minutes), add 5 jarred roasted red bell peppers into a food processor, a 1/4 cup of canned tomato concentrate, 1 clove of garlic, the toasted almonds & hazelnuts, 1/2 tsp red wine vinegar, 1/4 cup extra virgin olive oil and season generously with sea salt & black pepper, process on a low speed for 2 to 3 minutes, or until everything is well combined and you end up with a creamy texture, set aside

  2. Grill 4 slices of bread on a pan or in a toaster until lightly toasted, just to give the bread some texture

  3. Heat a small fry pan with a medium-high heat and add in a generous 1/4 cup of extra virgin olive oil, after 3 minutes start cooking your eggs, one at a time, the secret to getting the perfect crispy fried egg is to not flip the egg, once you add the egg slightly tilt the pan and let the hot olive oil cook the egg whites, after about 90 seconds, the egg should be crispy underneath, egg whites done and the egg yolk still creamy, remove from the pan and continue to cook your eggs, one at a time, once they´re all done, season them with a little sea salt and black pepper

  4. Spread some of the romesco sauce on each piece of toast, add one egg on top and garnish with fresh parsley, enjoy!
