Couscous has gained a lot of popularity in the western world within the last recent years, it´s super easy to make, it has an extraordinary flavor, and you can add just about any toppings you want to it. Couscous is made from durum, which is a hard wheat, and it originates somewhere in the north african coast. Now, I have met and talked with so many people that have never eaten couscous or even heard of it, and honestly, it leaves me wondering why? I have been consuming couscous for years, and only because I love it, well also because it´s a dish that is literally done within 20 minutes! This recipe for vegetable couscous is a great introduction to couscous if you have never had it before. It is above and beyond easy to make and you can serve it as a side dish or even as a main course. Easy Recipe for Vegetable Couscous

Ingredients

  • 1 Cup of Couscous
  • 1 Cup of Water
  • 2 Cloves of Garlic
  • 1/2 Red Bell Pepper
  • 1/4 Zucchini
  • 6 Button Mushrroms
  • 2 Tbsp Extra Virgin Spanish Olive Oil
  • 1/2 Tsp Smoked Paprika
  • Sea Salt
  • Freshly Cracked Black Pepper
  • Fresh Parsley

Instructions

  1. Finely mince 2 cloves of garlic, finely dice a 1/4 of a zucchini, finely dice 1/2 of a red bell pepper and thinly slice 6 button mushrooms
  2. Heat a small sauce pan with a medium heat and add 2 tablespoons of extra virgin Spanish olive oil, once the oil get´s hot add the minced garlic, 30 seconds later add the diced zucchini and diced red bell peppers and mix everything together
  3. After 5 minutes of cooking add the sliced mushrooms to the sauce pan, season everything with sea salt and freshly cracked black pepper and mix everything together, cook for about 2 minutes, then add a 1/2 teaspoon of smoked paprika, mix it with the rest of the ingredients and then add 1 cup of water into the sauce pan, season with a little more sea salt and turn up the fire to a high heat
  4. Once you come to a boil, add 1 cup of couscous to the pan, lightly mix it with the ingredients, place a lid on the sauce pan and turn OFF the heat
  5. After letting the couscous steam for at least 5 minutes, remove the lid and fluff up the couscous with a fork
  6. Transfer to a plate and serve, garnish with some fresh parsley
  7. Enjoy!
