Ok, I´ve noticed that the whole low carb and gluten-free thing have been gaining a lot of popularity in the last couple of years, and with good reason why. Low carb meals can help you slim your waist line, while most people with celiac disease choose a gluten-free diet as their best choice. Now, with pizza being one of the most popular foods in the world (and one of my favorite things to eat!), I decided to create a low carb and gluten-free version. This recipe is above and beyond easy to make, and believe me, it has an incredible flavor. These zucchini pizza boats are addicting! and they can be served as a main course or even an appetizer. This is a pretty basic recipe I have created, you can play around with adding more toppings, such as ham, pineapple, pepperoni or anything else you like. Zucchini Pizza Boats - Low Carb and Gluten-Free

Ingredients

  • 1 Large Zucchini
  • 1 Large Tomato
  • 2 Cloves of Garlic
  • 1 Tbsp Extra Virgin Spanish Olive Oil
  • 1 Ball of Fresh Mozzarella
  • Fresh Basil
  • Dried Oregano
  • Sea Salt
  • Freshly Ground Black Pepper

Instructions

  1. Pre-heat your oven with the bake/broil option to 210 C (410 F)
  2. Finely mince 2 cloves of garlic and finely dice 1 tomato, add each to a seperate bowl and set aside
  3. Cut a large zucchini in half, then cut each half again horizontally, you should end up with 4 pieces, using a spoon, de-seed each piece of zucchini, leaving a 1/4 inch border on each end
  4. Evenly distribute the tomatoes first and then the garlic into each zucchini boat, drizzle some extra virgin Spanish olive oil on top of each boat and season with sea salt and freshly cracked black pepper
  5. Evenly distribute 1 ball of fresh mozzarella to the 4 pizza boats, break the mozzarella with your hands as you add it to each zucchini boat and season with dried oregano on top
  6. Add the zucchini pizza boats to a baking tray lined with parchment paper and add to the oven for about 18 minutes
  7. Once cooked, take the baking tray out of the oven and let the zucchini pizza boats rest for about 5 minutes
  8. Transfer the zucchini pizza boats to a plate and top each one off with freshly chopped basil
  9. Enjoy!
