When it comes to appetizers, salmon is probably the last thing that comes to mind, unless it´s smoked salmon. But in this recipe we are talking about fresh salmon. In Spain, small amounts of just about any food you can think of are pierced with a toothpick, and then eaten as a fun and enjoyable appetizer. Just the other day, I was searching through my fridge and found a fresh salmon fillet I had purchased a couple of days ago. As I stared at the fillet, I thought of making an appetizer out of it, instead of throwing it on the grill for lunch. So I decided to cut the fillet into squares, make salmon skewers and serve them up with a lemon-olive oil sauce to dip in. The result was an incredible and satisfying appetizer that my family really enjoyed. Salmon Skewers with a Lemon Sauce

Ingredients

  • 1 Fillet of Fresh Salmon (approx 1 pound)
  • 3 Tbsp Extra Virgin Spanish Olive Oil
  • 1/2 Lemon
  • 1/2 Tsp Dill
  • 2 Garlic Cloves
  • Fresh Parsley
  • Sea Salt
  • Ground Pepper
  • Toothpicks

Instructions

  1. Cut the salmon fillet into squares that are 1 inch x 1 inch and then add the squares to a large bowl
  2. Add 1 tbsp of extra virgin olive oil, 1/2 tsp dried dill, about 2 tsp of fresh lemon juice, a pinch of sea salt and some ground pepper to the bowl and mix everything together until all the salmon squares are well coated
  3. Grab 1 clove of garlic and roast it on your burner (or oven) until it´s roasted, then peel and clean any burnt parts
  4. Using a cylinder, add 2 tbsp of extra virgin olive oil, the roasted garlic, 1 raw garlic, 2 tsp fresh lemon juice, a pinch of sea salt and a generous pinch of freshly chopped parsley
  5. Using a hand-held mixer, mix everything in the cylinder until it becomes a smooth puree
  6. Grab a non-stick frying pan and heat it with a medium heat
  7. Once the pan gets hot add the salmon squares, turning about every minute until fully done (4 to 5 minutes)
  8. Transfer the cooked salmon squares to a bowl and remove the skin (skip this step if you are using a skinless fillet)
  9. Decorate the salmon squares on a plate, place a bowl in the middle of the plate and fill with the lemon-olive oil sauce
  10. Pierce each square of salmon with a tootpick and garnish the dish with some fresh parsley
  11. Enjoy!
