Everybody loves hummus, it´s such a wonderful dip that can be stuffed into pita breads or spread on wraps, but it´s most popular as an appetizer, with some veggies or flatbreads to dip. Here is the catch, most people buy store bought pre-made hummus….common, we can do better than that! Once you make your own homemade hummus, you will never buy store bought again! The best parts about making your own homemade hummus? You get to choose what flavors you want, you get to use fresh ingredients, and it is above and beyond easy to make. This recipe of homemade roasted red bell pepper hummus is made in a somewhat traditional way, except I have made my own little tweaks to it. The combination of ingredients in this recipe truly gives this hummus and exceptional flavor. Homemade Roasted Red Bell Pepper Hummus

Ingredients

  • 1 Red Bell Pepper
  • 3 Cloves of Garlic
  • 1 Cup Jarred Garbanzo Beans
  • 1 Tbsp Toasted Tahini Paste
  • 1 Lemon
  • 1/2 Tsp Smoked Paprika
  • 1 Tbsp Water
  • 1/4 Cup Extra Virgin Spanish Olive Oil + more for drizzling
  • Sea Salt
  • Freshly Cracked Pepper
  • Basil for Garnish

Instructions

  1. Pre-heat your oven with the bake/broil option to its highest setting
  2. Add 1 red bell pepper to a baking tray, drizzle with a kiss of extra virgin Spanish olive oil and season with sea salt, wrap 2 cloves of garlic in foil paper and also add to the baking tray, insert into the oven between 18-20 minutes
  3. Add 1 cup of jarred chickpeas (rinsed and cleaned) to a food processor, also add 1 tablespoon of toasted tahini paste, the juice of 1 small lemon, 1/2 teaspoon of smoked paprika and 1 clove of raw garlic
  4. Once the bell pepper and garlics have cooled off, remove the skin and add them to the food processor, along with a 1/4 cup of extra virgin Spanish olive oil,1 tablespoon of water, then season with sea salt and freshly cracked black pepper
  5. Process everything in the food processor for about 3 minutes or until you form a smooth paste
  6. Add the hummus to a bowl, cover with seran wrap and add to the fridge for at least 1 hour to let all the flavors develop
  7. When ready to be served, drizzle with some extra virgin Spanish olive oil on top and decorate with freshly chopped basil, serve with flatbreads or with cut up veggies
  8. Enjoy!
