If your like me, you´re always having family and friends over to your house for lunch, dinner, sports games, etc… which in return, you´re always being invited to their houses for the same thing. I just love being around family and friends while enjoying good food and creating great memories. With that being said, I´m always trying to come up with new dishes to serve to my guest, and since it happens so often I try my best to make them healthy. Ok, let´s get to the topic of this post, Spinach and Artichoke Dip, this is a fantastic appetizer that is creamy and loaded with flavor, I love it, and I think most people do, the only bad thing? it´s loaded with calories and fat! So, I decided to create a healthier version, that way you can have the cake and eat it too 🙂 . This healthy spinach and artichoke dip recipe is truly a winner, I have served it to my guest and not once did they ask if I made it ¨healthier¨, it´s so good you don´t even notice it, of course I am giving my self high-fives for the accomplishment! Healthy Spinach and Artichoke Dip Recipe

Ingredients

  • 4 Cups Tightly Packed Fresh Spinach
  • 1 Cup Jarred Artichokes
  • 2 Cloves of Garlic
  • 1 Onion
  • 1/2 Tsp Smoked Paprika
  • 4 Ounces Low-Fat Cream Cheese
  • 1/2 Cup Low-Fat Queso Manchego
  • 1 Cup Greek Yogurt
  • 2 Tbsp Extra Virgin Spanish Olive Oil
  • Sea Salt
  • Freshly Cracked Black Pepper

Instructions

  1. Heat a large non-stick frying pan with a medium heat, add a 1/4 cup of water, 4 cups of tightly packed bagged spinach and add a lid to the pan, after 2 minutes remove the lid and turn off the fire, mix the spinach and add it to a sieve, using a wooden spoon push down on the spinach to remove all the excess liquid, transfer the spinach to a cutting board, finely mince it and set aside
  2. Finely mince 2 cloves of garlic, finely dice 1 onion and dice up about 1 cup of jarred artichoke hearts
  3. Heat a non-stick frying pan with a medium heat and add 2 tablespoons of extra virgin Spanish olive oil, once the oil get´s hot add the minced garlic and diced onions to the pan and mix with the oil, after cooking for about 5 minutes add 1/2 teaspoon of smoked paprika, the diced artichokes, the minced spinach, season with sea salt and freshly cracked black pepper, mix everything together and cook for another 3 minutes
  4. Next add 4 ounces of low-fat cream cheese and shred in about 1/2 cup of low-fat queso manchego, season again with sea salt and freshly cracked black pepper and mix everything together until well mixed and the cheeses have melted, then turn off the heat
  5. After letting the mixture rest for a couple of minutes, add 1 cup of Greek yogurt and mix it in with the rest of the ingredients until you achieve a creamy texture, adjust your seasoning
  6. Serve with whole wheat crackers
  7. Enjoy!
