Pan Grilled Cuttlefish – Sepia a la Plancha

Seafood in Spain is like bacon in North America (so says my Californian wife), we consume it almost everyday. This recipe uses cuttlefish, which is most commonly found in the Mediterranean and the Baltic Sea.

Cuttlefish is very similar to squid, except it has a bit more flavor, this is why it´s not usually deep-fried. This seafood tapa of pan grilled cuttlefish, known as ¨Sepia a la Plancha¨ in Spain, is found in just about every single bar and restaurant in Spain.

Ingredients

  • 1 Whole Cuttlefish Cleaned
  • 3 Tbsp Extra Virgin Spanish Olive Oil
  • 1 Clove Garlic Minced
  • 1/2 Lemon
  • Fresh Parsley
  • Sea Salt

Instructions

  1. Using a mortar & pestle add 1 clove of minced garlic and pound into a paste
  2. Add a generous pinch of fresh parsley and some sea salt to the garlic and pound it all together
  3. Once well mixed, add 2 tablespoons of extra virgin Spanish olive oil and mix it with the garlic and parsley
  4. Cut the cuttlefish into 1/4 inch squares
  5. Grab a frying pan, heat with a medium-high heat and add 1 tablespoon of extra virgin olive oil
  6. Once the oil gets hot, add the cuttlefish to the pan and stir
  7. After about 2 minutes, add the garlic and parsley sauce to the pan and mix together with the cuttlefish
  8. After cooking the cuttlefish for about 4 minutes, turn your fire off and transfer the cuttlefish to a plate
  9. Lightly sprinkle with some sea salt
  10. Squeeze some fresh lemon on top
  11. Garnish with some freshly chopped parsley
  12. Enjoy!
