Everybody loves a great salad, their refreshing, satisfying and usually served as a starter or even the main course on a hot summers day. A couple of months ago, I was traveling back to Spain from a family trip to Disneyland Paris. At the half-way point, we stopped in this little town in central-southern France called ¨Saint-Flour¨. As we strolled through the cobblestone streets, we ran into this tiny little French restaurant and decided to have dinner there. I felt like a salad, so I ordered a ¨Simple Salade Vert¨ translated to a simple green salad. Let me tell you it was out-of-this-world good! It inspired me to create my own version of this fantastic salad. Ingredients

  • 1 Head of Ice Berg Lettuce
  • 3 Slices Dense Baguette Bread
  • 1 Clove of Garlic
  • 3 Tbsp Extra Virgin Spanish Olive Oil
  • 1 Tsp Dried Parsley
  • 1/2 Tsp Dried Thyme
  • 1/2 Tsp Garlic Powder
  • 2 Tbsp Dijon Mustard
  • 1 Tbsp Creamy Balsamic Vinegar
  • Queso Manchego
  • Sea Salt

Instructions

  1. Pre-heat your oven with the bake/broil option to 210 C (410 F)
  2. Grab 3 slices of dense baguette bread and cut into evenly sized small cubes
  3. Add the bread cubes to a bowl, drizzle a generous tablespoon of extra virgin Spanish olive oil, 1/2 teaspoon of dried parsley, 1/2 teaspoon of garic powder and a hint of sea salt and toss everything together
  4. Add the bread cubes to a baking tray and add to the oven between 12-15 minutes
  5. Meanwhile, finely mince 1 clove of garlic, add to a mortar and pound into a paste
  6. Add 1/2 teaspoon of dried thyme, 1/2 teaspoon of dried parsley to the mortar and mash with the garlic
  7. Next add 2 tablespoons of dijon mustard, 1 tablespoon of creamy balsamic vinegar and a pinch of sea salt to the mortar, and mix everything together
  8. Add 2 tablespoons of extra virgin Spanish olive oil to the mortar and mix until you get a mayonnaise like texture, set aside
  9. Roughly chop a head of ice berg lettuce, rinse and pat dry and add to a large bowl
  10. Add the dressing in the mortar to the bowl with the lettuce and mix everything until all the lettuce is well coated, then transfer to a shallow bowl
  11. Top your salad off with the homemade croutons and some freshly shredded queso Manchego
  12. Enjoy!
