Classic Patatas Bravas

Every time I leave Spain and return back, the first thing I look forward to is going to my neighborhood tapas bar and ordering some patatas bravas and a cold beer. It has been said (and proven) that a tapas bar is judged by the quality of their bravas, if they are excellent, the rest of the food will be as well, however, if they just aren’t up to par, the rest of their food will lack on flavor and quality. Classic Patatas Bravas with Aioli

Ingredients
  1. (2) Medium Russet Potatoes
  2. (1/4) Cup Extra Virgin Olive Oil
  3. (1) Clove Garlic Minced
  4. (1) Teaspoon Smoked Paprika
  5. Fresh Parsley
  6. Sea Salt
Instructions
  1. Pre-Heat oven (bake and broil) to 210C - 410F
  2. Cut potatoes into even sized cubes
  3. Drizzle olive oil on a baking sheet
  4. Add potatoes to baking sheet and spread evenly
  5. Drizzle more olive oil over potatoes
  6. Cook in oven for about 35-40 minutes
  7. FOR THE SAUCE
  8. Using a small fyring pan on medium heat, add 2 Tbsp of olive oil
  9. Add minced garlic
  10. add Tsp smoked paprika
  11. mix all together and cook for about 1 minute, set aside
  12. After 40 minutes take the potatoes out of the oven
  13. Add the potatoes to a bowl and add the sauce
  14. Add a generous pinch of salt and mix together to coat every potato
  15. Transfer potatoes with sauce to a plate
  16. Top off with some homemade Aioli and Garnish with Parsley
  17. Enjoy!
